What's the highest pressure this fitting can handle? Don't want it blowing apart on me.

It's rated for a maximum dynamic pressure of 6,000 psi, so it should hold up well in demanding industrial applications.

Got a 1/4 inch male NPTF on my line and need to bump up to a 3/8 female connection, this the right fitting for that?

That's what this expander is built for. The male end is 1/4-18 NPTF and the female end opens up to 3/8-18 NPTF, so it steps your line up from the smaller connection to the larger one in a straight configuration. Both threads conform to SAE J476, so you're getting a proper dry-seal fit on each side.
