Will this fitting hold up okay if I'm running hydraulic fluid through it pretty much all day long?

This fitting is constructed of steel for durability, so it should be suitable for continuous use with hydraulic fluid.

both sides are M42 x 2.0 DIN tube connections, does that mean this fitting is meant to join two DIN tube lines at a right angle, or is there some other purpose to having the swivel on the female end?

Right angle routing between two DIN tube connections is exactly what this fitting handles. The swivel on the female side lets you get the fitting into position and then rotate it to align with your tube before you lock everything down. That's handy when you're working in a tight spot and can't easily spin the whole assembly to get things lined up.
