What's the deal with the width on this thing? Gotta make sure it fits in my setup, y'know.

Adaptall's spec lists Ch1 width at 37mm and Ch2 width at 46mm, so you can check those against your available space.

both sides on this fitting are M36 x 2.0 DIN, so does the swivel actually rotate or is it fixed once you tighten it down?

The swivel function is what sets this apart from a standard elbow. Even after the connections are made up, the fitting is built to rotate, which lets you adjust orientation without having to loosen or re-torque the joint. That's the whole point of going with a swivel style over a fixed 90 elbow, especially when you're working in a tight spot and need to clock the hose or tube line after assembly.
