both sides on this fitting are M14 x 1.5 thread, does that mean it'll connect two DIN tube ends of the same size together, just at a 90 degree angle?

Correct on both counts. Side 1 is a male DIN tube connection and Side 2 is a female DIN tube connection, both M14 x 1.5 at S06 sizing. The 90 degree elbow shape lets you route a line around a corner while keeping the same thread spec on each end. The female side swivels, which makes it a lot easier to get the fitting seated without having to spin the whole assembly.

What's the width of the wrench flats on each end of this fitting? Looks like I need two different sizes.

The wrench flat width (Adaptall Ch1 Width) on one side is 12mm, and the other side (Adaptall Ch2 Width) is 17mm.
