Will this fitting let me hook up a metric tube to something with an NPT port?

That's what it's for. This Adaptall fitting is made to connect a 28L metric tube to a 1/6 NPT male thread. It's a pretty common setup in hydraulic systems when you're mixing metric and NPT threads.
