Got a grease gun with a 1/8 NPT port on it, will this adapter let me hook up fittings that run 1/4-28 SAE taper?

That's exactly what it's built for. The male end threads onto a 1/4-28 SAE taper fitting and the female end accepts a 1/8 NPT connection, so it bridges those two thread types. The 90-degree elbow also helps when you're working in a spot where a straight adapter just won't clear.
