fitting's got an M16 x 1.5 on one side and M14 x 1.5 on the other, that right?

Correct on both counts. Side 1 is an M16 x 1.5 DIN tube connection in the S08 size, and Side 2 is an M14 x 1.5 metric connection at 14mm. The straight configuration keeps them in line, so there's no offset or angle to account for when you're routing your line.

trying to match up a fitting i pulled off, is this one the straight steel adapter with M16 x 1.5 on one side and M14 x 1.5 on the other?

It’s a straight steel Adaptall fitting with a Side 1 DIN Tube male connection in M16 x 1.5 (S08) and a Side 2 male Metric connection in M14 x 1.5 (14mm).
