fitting's got an M36 x 2.0 on one end and M33 x 2.0 on the other -- that right? just want to make sure before i order a handful of these

Correct on both counts. Side one is a DIN Tube connection at M36 x 2.0 and side two is a Metric connection at M33 x 2.0. Both sides are male, so plan accordingly when you're putting together your assembly.

got a machine with a DIN tube end that’s M36 x 2.0, will this fitting mate up to it and step over to M33 x 2.0 on the other side?

The ends are a male DIN Tube connection in M36 x 2.0 on one side and a male Metric connection in M33 x 2.0 on the other, so it is meant to bridge those two thread sizes in a straight adapter.
