i’ve got a metric DIN tube end that’s M12 x 1.5, will this fitting get me over to a 1/4 BSPT male?

It’s meant for exactly that kind of changeover. One side is a M12 x 1.5 DIN tube connection, and the other side is a 1/4 inch BSPT male thread called out as R 1/4 - 19.

What size DIN tube does this fitting connect to, and what's on the other end of it?

One side takes an M12 x 1.5 DIN tube connection, male, and the other end is a 1/4 inch BSPT male thread. So you're adapting a metric DIN tube side over to a British standard tapered pipe thread on the outlet. Both ends are male, straight through, no bends or offsets.
