What exactly is this fitting bridging together, like, is it going from a metric tube end to a standard SAE port?

Yeah, that's exactly what it does. One side is a DIN tube end with an M30 x 2.0 male thread, and the other side is a 3/4-16 UNF SAE O-Ring Boss male port. So if you've got a hydraulic line running metric DIN fittings that needs to tie into an SAE ORB port on a valve block or manifold, this is the piece that makes that connection work without having to swap out a bunch of other hardware.

got a line with an M30 x 2.0 DIN tube end, and the port on the block is 3/4-16 UNF ORB. is this the right adapter to marry those up?

For tying those two thread standards together, this fitting is made for exactly that combo: Side 1 is a male M30 x 2.0 DIN tube end (size S20), and Side 2 is a male 3/4-16 UNF SAE O-Ring Boss, listed as 1/2 inch on the ORB side.
