Will this here adapter hold up if I'm running hydraulic oil through it at, say, 2500 psi?

got a din tube end that’s M30 x 2.0 (L22). will this adapter get me over to a 1/2 BSPP male port?

On the DIN tube side, it uses an M30 x 2.0 male thread in size L22, and the other end is a male BSPP threaded G 1/2-14 with a 1/2 inch nominal size, so it’s meant for exactly that DIN tube to BSPP male port connection.
