what material is this fitting made out of, and does it have any kind of coating on it?

Carbon steel is the base material, and it comes with Dura-Kote plating applied to it. That plating is specifically there to hold up against corrosion, which matters a lot in hydraulic line work where moisture and fluid exposure are pretty much constant.

Will this fitting hold up if it gets exposed to some pretty harsh chemicals?

Dura-Kote plating gives this fitting superior corrosion resistance, so it should hold up well.

got a -6 hose end and need a female JIC 37, is this the right deal or am i off?

Match up the key callouts: it is a -6 hose dash size fitting with a female JIC 37 end, and the female end size is 0.5625. If those are what you are replacing, this assembly lines up with that connection style.
