fitting says it's for a -5 hose dash size, that the same as half-inch hose or is that something different?

A -5 dash size works out to a 5/16 inch inside diameter hose, so it's not the same as a standard half-inch hose. The swivel end on this fitting measures 9/16 inch, which is the thread dimension, not the hose bore. Just make sure you're matching the dash size on your Synflex Optimum crimp hose assembly to confirm it's the right fit before you go to press it.

Will this fitting work with any old hose, or does it need something specific?

This fitting is designed to work with Synflex Optimum crimp hose assemblies. It's part of the Eaton Aeroquip 4T Series, so it's system-engineered to work best with compatible hose and tooling from that line.
