fitting's got the Dura-Kote plating on it -- does that hold up decent against rust or is that just a coating name that don't mean much in real conditions?

Dura-Kote is an actual corrosion-resistant plating applied to the carbon steel body, not just a label. It's specifically there to extend service life in environments where moisture or other corrosive exposure is a concern.
