Does the Dura-Kote plating on this fitting actually hold up in wet or high-humidity environments, or is that more of a marketing thing?

Dura-Kote is a real corrosion-resistant plating applied to the carbon steel body, so it does give you meaningful protection against rust and surface degradation in damp or exposed conditions. It's not just a label. That said, it works best as part of a properly assembled hose system, which is what the 4S series crimp fittings are engineered around. The plating combined with the system-engineered design is specifically aimed at extending assembly life and keeping things running longer between replacements.
