fitting's got a DIN 24° seat and it's a 90° swivel, does the carbon steel hold up alright in environments where there's some moisture or rust risk?

Dura-Kote plating is applied to this fitting specifically to fight corrosion, so moisture-prone environments are well within its intended use case. Carbon steel on its own can be vulnerable, but that plating extends the life of the assembly considerably compared to an uncoated fitting. It's one of the reasons Eaton Aeroquip put that finish on the 4-Wire Spiral TTC line to begin with.
