does the Dura-Kote plating on this fitting hold up in wet or outdoor environments, or is that more of a shop-condition kind of thing?

Dura-Kote is a corrosion-resistant plating specifically applied to give these fittings better staying power against moisture and environmental exposure than standard carbon steel fittings would offer on their own. It's not a coating thrown on as an afterthought. For wet or outdoor-adjacent conditions, that added protection is one of the reasons it's there.
