what's the o-ring made of on this fitting, and will it hold up running hydraulic oil through it regular?

NBR is the o-ring material on this elbow, and it handles hydraulic oil just fine. That compound was pretty much built for petroleum-based fluids, so continuous exposure to oil won't break it down the way it would some other elastomers. Fuel and general chemical contact are also within its range, which makes it a solid choice for most standard hydraulic circuits.
