Reckon this'll hold up okay for connecting a hydraulic line at a 90-degree angle?

trying to swap out an old elbow, is this one the 3/8 hose barb to 1/4-18 male NPTF deal?

Match the ends up to a 3/8 inch hose barb on one side and a 1/4-18 male NPTF thread on the other. It is a 90 degree elbow, so it turns the hose run at a right angle.

what's the thread size on the pipe end of this elbow? got a 1/4 inch line i'm trying to tie into

The pipe end is a 1/4-18 male NPTF thread, built to SAE J476 spec. That'll mate up with a standard 1/4 inch female NPT port without any adapters in between.
