got a line running M10 x 1.0 metric on one end and need to tie into a DIN tube fitting, M12 x 1.5, this elbow gonna work for that?

That's what this fitting does. One side is a male DIN tube connection, M12 x 1.5 thread at L06 size, and the other is a male metric at M10 x 1.0, 10mm. Both sides match what you described, so you'd be good to go.
