pump's got a 3.00 CID displacement, that right for running equipment like a crawler dozer or mini excavator without being underpowered?

For that range of equipment, the 49cc displacement puts this pump in solid territory. Crawler dozers and mini excavators both show up on the application list for this unit, so it was built with exactly that kind of load in mind. The high pressure and flow capacity back that up, meaning it won't be starved trying to keep up with the demands of ground-engaging work. It's not a light-duty unit dressed up in heavy-duty language.

Will this Eaton-Danfoss pump work on a mini excavator?

It's applicable to mini excavators, yes. Also good for loader backhoes, mining machinery, and even concrete pavers.
