Running a refuse hauler and trying to figure out if this valve can hold up to the pressure demands we throw at it, we're regularly seeing spikes close to 5000 psi on the system. That gonna be a problem?

At 350 bar, which works out to exactly 5000 psi, this valve sits right at the upper limit of what you're describing. It's rated to handle that pressure, so regular operation in that range is within spec. Just know you're running at the ceiling, not with a lot of headroom above it.
