Hardened and ground steel throughout. That kind of construction holds up a lot better under the stress cycles you see in harvest equipment compared to valves using softer or cast materials. The S607N is part of the S207 Series from Vickers by Danfoss/Eaton, and that line has a solid track record in exactly the kind of punishing mobile applications you're describing.
