Factory set at 2,000 psi is fine for most of what I run, but can that relief valve be adjusted up or down if the job calls for something different?

Yes, and that's one of the more useful things about this valve. The pin-type relief is adjustable, so if your application runs at a lower working pressure or you need to tweak it after installation, you've got that flexibility without swapping out components. It ships set at 138 bar (2,000 psi) from the factory, which covers a wide range of common mobile hydraulic work right out of the box.
