what exactly does the "8-8" mean in the part number on this hose end?

Both of those 8s refer to the port sizes in dash sizing, which is a standard way the hydraulic industry measures fittings. Dash 8 works out to 1/2 inch, so you've got a 1/2 inch hose connection on each end. That lines up with the 1/2 x 1/2 in the product name, just expressed a different way.
