These got an M20 x 1.5 thread callout listed, does that mean they're meant to seat against M20 fittings specifically, or can they work with other metric sizes too?

That 26mm outer diameter and the M20 x 1.5 callout go hand in hand. The washer is sized to seat properly against M20 metric fittings, so that's the connection point it's built around. Using it with a different metric thread size would likely give you an improper seating surface and a seal you can't trust.
