Does the hose barb side actually grip a 5/8 inch hose solid enough to hold pressure, or do I need to use a clamp on top of it?

A clamp is the right call for any pressurized line. The barb is shaped to seat the hose snugly, but in hydraulic service you always want a clamp or crimp over it to keep things from walking loose under pressure. The barb geometry gives you a good mechanical bite to start with, and the clamp locks that in.

got a 5/8 inch hose and a 1/2 male pipe connection. is this the right fitting to tie those together

For tying a 5/8 inch hose onto a 1/2 inch male pipe connection, that is exactly what this adapter is made for. It is a hose barb on one end for the 5/8 inch hose, and a 1/2 inch male pipe end on the other.
