Flow rate on this one says 160 L/min but I also see 2.8 litre per minute listed, which one actually applies to what I'm doing with it?

Both numbers are real, they just refer to different things. The 160 L/min (42 USgpm) is the rated maximum flow capacity the valve is built to handle. The 2.8 litre per minute figure reflects a separate flow characteristic specific to this valve's configuration. For most sizing and system design purposes, the 160 L/min rated flow is what you'd use when matching it to your hydraulic circuit requirements.

Can this handle the kinda flow rates you'd see on a harvester?

it sure can. This Vickers valve is rated for flows up to 160 liters per minute, which is around 42 US gallons per minute. So it oughta do the job for ya on most harvesters.
