runs up to 5000 psi on this thing or is that just peak for a split second?

That 5000 psi rating is the maximum working pressure for the valve, not just a momentary spike tolerance. At 350 bar continuous, it holds up in demanding mobile and industrial setups. Flow capacity tops out at 30 liters per minute, so as long as your system stays within those numbers, you're in good shape.

So, this is a poppet style valve, right? Does that make it better for some applications than others?
