Running this on a refuse hauler that cycles pretty hard throughout the day. At 114 litres per minute, is that flow rate gonna hold up under that kind of continuous back-and-forth use?

Refuse haulers are actually one of the applications this valve was built around, so that duty cycle is well within its intended use. The poppet-style construction is part of what makes it reliable across variable cycles since poppet designs tend to hold their calibration better under repeated load changes than spool-type valves. The 114 L/min flow rating combined with the 350 bar pressure ceiling gives you a decent margin for a hard-working truck circuit without running the valve close to its limits on a normal route.

So this thing's made for harvesters and stuff, but could I use it on, say, a log splitter?

This RV2-10 series valve is often found in mobile hydraulics like you'd see on harvesters and refuse trucks, so a log splitter wouldn't be out of the question as long as your pressure and flow needs are in line with its specs.
