Reckon this valve'd hold up okay on a refuse truck, dealin' with pressure all day long?

Running a refuse hauler and need a pressure control valve that can keep up with the demand. This PSV11-12 rated for the full 5000 psi?

Rated up to 350 bar, which works out to 5000 psi, so yes it covers that range. Flow capacity tops out at 300 L/min (80 USgpm), and the valve supports a minimum flow of 1 litre per minute, so it handles a pretty wide spread of circuit conditions. Refuse haulers are actually one of the named applications for this valve, so it fits that use case well.
