Running this on a refuse hauler setup. Does she handle 5000 psi without any grief, or is that pushing it?

350 bar is the rated max pressure, which works out to right at 5000 psi. For a refuse hauler application that's exactly the kind of load this valve was built around, so you're well within its intended use case. Flow capacity tops out at 300 liters per minute, or about 80 US GPM, so there's plenty of headroom there too.
