Got a harvester that's been running a different flow control setup, but the system's rated around 5,000 psi and I need something that'll hold up to that. This the right valve for that kind of pressure?

Yeah, 5,000 psi is exactly what the FCV7-10 series is built for. Rated to 350 bar, which works out to that same figure, so you're not pushing it at all running at that level. The 45 litre per minute rated flow and the 1/2" port size on this particular model are worth confirming against your existing circuit layout, but from a pressure standpoint it's fully capable of handling what you're describing.
