flow rate on this thing is listed at 64 litres per minute at the valve, but the system capacity goes up to 350 L/min, how does that work exactly?

The 350 L/min figure reflects the broader system capacity the valve is rated to operate within, meaning the overall hydraulic circuit can be moving that much fluid, but the valve itself is managing its portion at 64 L/min. Pressure compensation keeps that valve-level flow steady even when system pressure shifts around.
