running a refuse hauler setup and need something that'll hold up at high pressure, does this valve actually handle 5,000 psi or is that just a series rating?

Both, and they're the same number. The 350 bar (5,000 psi) pressure rating applies to this valve and reflects the capability built into the SV5-8 series. The hardened and ground steel construction is what makes that rating practical rather than just a spec on paper. For refuse hauler circuits running near that pressure range, this is built to take it.
