Got a harvester sittin' idle right now waitin' on a solenoid valve. This SV15-8V-0S-0-00 come in normally open configuration by default or do I need to spec something different?

Normally open is exactly how this one comes out of the box. The 2-way, 2-position normally open setup means flow passes through in its unpowered state and shuts off when the solenoid energizes. For harvester applications that's often exactly what you want, so no additional configuration is needed on your end.
