Running this on a refuse hauler setup, does it hold up to 5000 psi steady or is that more of a peak rating?

At 350 bar, which works out to 5000 psi, that is the maximum pressure rating for this valve. For a refuse hauler application it should handle the demands of that kind of work. The hardened and ground steel construction is what gives it the durability to hold up under that kind of pressure in tough, repetitive-use environments.
