Reckon this would work on a mobile harvester alright?

Running this on a refuse hauler, does it hold up to 5000 psi, or is that more of a peak rating I shouldn't count on for regular use?

350 bar, which works out to 5000 psi, is the rated operating pressure for this valve. Built from hardened and ground steel, it's meant to handle the kind of sustained demands you'd see in refuse hauler circuits, not just momentary spikes. For mobile applications like that, it's a solid fit.
