Got a harvester that needs a fail-safe valve setup, will this one default closed if power cuts out?

Yeah, normally closed is exactly what you've got here. When the solenoid loses power, the valve shuts. That's the whole point of the NC configuration, and it's one of the reasons this series gets used in harvesters and similar mobile equipment where you want things to stop moving if something goes wrong electrically.
