what's the connection setup on this tee, is one end male and the others female, or how's that work?

Two ends are female (FIP) and one end is male (MIP), which is what makes it a street tee. That male end lets you thread it directly into a female port without needing an extra nipple in between. Midland Industries makes this one in 1/8 inch, so all three ports are that same size.

On the run, it is a 1/8 FIP to 1/8 MIP, with the third leg being 1/8 FIP. That is what the FIPXMIPXFIP callout is describing.
