motor's rated down to -20 degrees, but how's it gonna hold up if we're starting it cold in the middle of winter with fluid that's been sitting overnight?

Cold starts are where a lot of gear motors struggle, and the -20 degree minimum working temperature on this one means it's built to handle exactly that kind of situation. Gear motors in this class are generally tolerant of thickened fluid at startup as long as you're within that rated range. If your overnight lows are staying above -20, you're working within spec and shouldn't see issues getting it moving even after a long sit.
