pump says it can reverse direction in the field, how involved is that process, and is it something a mechanic can do without pulling the whole unit off the machine?

Field reversible pump direction is a built-in feature on this unit, so you're not looking at a full teardown or a trip to a shop. A competent mechanic who's comfortable with hydraulic components should be able to handle it on-site.
