pump says it's field reversible - what exactly does that mean for someone swapping it into a machine that was already plumbed a certain way?

Reversing the pump direction means you can change which port acts as inlet and which acts as outlet without replacing the unit. So if your existing hydraulic lines are plumbed in a direction that doesn't match the default rotation, you can reconfigure the pump in the field to match rather than rerouting hoses or sourcing a different pump altogether. It's a practical feature when you're fitting it into a machine that's already set up a particular way.
