How tight should I crank this elbow down when I'm hooking up the tubing? Don't wanna overtighten it and mess things up.

For connecting the tubing, you'll want to tighten it enough to get a good seal without crushing the tube. Since it's a compression fitting, snug it down and then give it maybe a quarter turn past that. If it leaks, just tighten it a little bit more. Just be sure not to go overboard.
