Will this fitting work with any old 1/8 inch pipe thread or does it gotta be that 26001 adapter?

It's designed for use with the Midland 26001 series adapter. While the 1/8 inch MIP thread might physically fit other components, optimal performance and leak-resistance are assured within the specified system.
