pump says it can run in either direction, how hard is it actually to switch that in the field, or is it more of a one-time setup thing?

Field reversible means you can change the rotation direction without pulling the unit off the machine and sending it somewhere for rework. It's set up to allow that adjustment on-site, which saves real time when you're swapping configurations or repurposing equipment between jobs. That said, most operators pick a direction based on their circuit layout and leave it. It's more of a "you can if you need to" feature than something you'd be flipping back and forth regularly.
