Reckon this gear pump would hold up okay on my old tractor? Just need somethin' reliable for the hydraulics.

pump direction being field reversible, does that mean I can swap it without pulling the whole unit apart, or is that more involved than it sounds?

Field reversible on this Series 26 means you can change the rotation direction on-site without replacing the pump itself. That's a real convenience when you're swapping it into a different circuit or machine that runs the opposite direction from what the pump was originally plumbed for.
