Does this pump work for both tractor and harvester setups, or is it really built more for one over the other?

Both are squarely in its wheelhouse. The Series 26 is rated for tractors and harvesters alike, along with a pretty wide range of other equipment like lift trucks, fan drive systems, compactors, and rotary mowers. It's a fixed displacement external gear pump, so it handles auxiliary work circuits and steering circuits just as well. Versatility is kind of the whole point with this unit.
