Will this gear pump hold up in cold weather, say down around zero degrees Fahrenheit?

Rated for operation down to -20°C, this Danfoss / Eaton gear pump should work just fine even when it gets below zero degrees Fahrenheit.

pump says it's field reversible, what exactly does that mean for somebody swapping it into an older tractor setup?

Field reversible means you can change the rotation direction of the pump without sending it back to a shop or swapping in extra parts. If the circuit on your tractor runs the opposite direction from what the pump shipped as, you can reconfigure it on site. That kind of flexibility saves real time when you're working around existing hydraulic connections or drivetrain arrangements that aren't easy to change.
