pump says it's field reversible, is that something a guy can do himself or does it need to go to a shop?

Field reversible means the rotation direction can be changed without sending it out for service. It's set up to be done on site, which is handy when you're swapping it into a circuit that runs the opposite direction from the original pump. Just make sure you know which direction your system calls for before you button everything up.

Will this work for steering on my tractor?

It's applicable to steering circuits, as well as tractors and harvesters. It's also used in machine tools and other applications, if that helps.
